The Bikini Cocktail

Makes enough for 10 guests

Ingredients for the Clementine Syrup (makes 750ml)

300ml newly squeezed clementine juice
200ml recently pressed lemon juice
500g caster sugar

For the Cocktail (yields 850ml, to serve 10)

400ml premium vodka
100ml classic gin
150ml peach schnapps
200ml clementine cordial (from the recipe above)
Fresh cranberries, for garnish
Mandarin essential oil, as a final touch

Directions

To prepare the Syrup: Place the listed components into a pot, heat until it reaches a simmer, mixing until the sugar dissolves. Then, turn off the stove allowing it to cool completely. Pour to a sealable bottle, seal and refrigerate it in the refrigerator, it can be stored for around a month.

For the Cocktail Base: Mix every spirits and syrup into a large bottle, allow it to infuse for 60 minutes, then strain preferably using a fine cloth, making it fully clarified.

When ready to serve: Add 85ml from the batch mix into a cocktail shaker containing ice, gently stirring carefully for one minute to cool it down. Pour to a cold coupe glass or equivalent, decorate with a few cranberries adding the final touch using a quick spritz with the mandarin essence above the glass.
